Class buddies jam making in the woods! Classes 1 and 6&7 have been making blackberry jam in the woods this morning ready for our Michaelmas celebrations later this month.
It was lovely watching the older children take such good care of the new class.
From the humble blackberry to delicious jam.
Start by popping the wild blackberries in a bowl (or pan). Add sugar and lemon juice, lemon juice helps the jam to set. Heat on low-medium heat, stirring continuously, to completely dissolve the sugar. Bring the mixture to a boil (a rolling boil that can’t be stirred down) at high heat for five minutes. Skim off any of the excess foam on top of the pan, for a clean jam. Remove from heat and leave the jam to cool for 10-15 minutes. Pour into sterilised jars.
